A Twice Baked Potato That Won’t Wreck Your Diet

A little known fact (or, perhaps not so little known) about me is that I ADORE food. Not just eating food. I adore cooking food, thinking up new, healthier ways to eat food and now I’m going to start sharing that kind of stuff with you!

I have been dying for a twice baked potato lately (maybe dying is a strong work, but I REALLY like food. And I REALLY like potatoes. So it’s just the right word for me to use.) However, every recipe I’ve come across that sounds yummy boats nearly 500 calories for an average sized potato, sometimes more. Of course, you can score a 390 calorie frozen one at Target, but it’s extremely disappointing in size.

So I went to work tonight when I got home from work and in 30 minutes had something I’m pretty pleased with. It’s delicious and WAY less than 500 calories. Observe.

Ingredients

  • 1 medium russet potato
  • 1/4 – 1/2 cup light silk (I used vanilla, because that’s what I had, but I’m sure that the original would be just as good – perhaps even better)
  • 2 tablespoons plain vanilla greek yogurt
  • onion powder, pepper, Mrs Dash Southwest Chipotle seasoning to taste
  • 1/2 a 100 calorie pack of Kraft mozzarella/garlic/seasoning cheese
  • Optional: Bacon Bits (I used vegetarian ones, but I wasn’t a big fan, so use whatever you prefer!)

Directions Prep Time: 20 minutes – Bake Time: 10 minutes
Calories: 240 – Total Fat: 2 g – Carbohydrates: 43 g – Protein: 14.5 g

Preheat the oven to 350 degrees.

Stab the potato 4 or 5 times in the top of the skin and put in the microwave for roughly 10 minutes, or until you can stab a fork through the skin an into the flesh without much resistance.

Cut the top off of the potato and scoop the flesh into a small bowl, get as close to the skin as you can without stabbing a hole through it. This might take some practice, I  know I tend to get carried away with my scooping! Add cheese, seasoning, Silk, and yogurt. Press out all the chunks with a fork and mix until creamy. Microwave to meld flavors and melt cheese for 30 seconds.

Remove potatoes from the microwave and fill the hole made in the baked potato with the mashed mixture. Top with bacon bits, pepper and Mrs Dash and put the potato on a baking sheet and pop it into the oven for 10 minutes.

Remove from oven. Don’t forget to turn it off ;.) and enjoy!
